Kale & Beetroot Winter Salad

A colourful, nutrient-packed salad with home-grown kale, sweet beetroot and a zesty mustard dressing.

Ingredients:

200g kale, stalks removed

1 large shallot, sliced

100g cooked beetroot, chopped

250g carrots, grated

30g dried cranberries

25g mixed nuts

125g goat's cheese (optional)

For the dressing: 

Juice of 1 lemon

1 tbsp Dijon mustard

1 garlic clove, crushed

1 tbsp maple syrup

1 tbsp rice vinegar

3 tbsp olive oil

salt & pepper

Method

Whisk the dressing in a large bowl, season and add kale and shallot. 

 

Massage for 2–3 minutes until softened.

 

Add beetroot, carrots, cranberries, nuts and goat’s cheese, then toss well to coat. 

 

Serve immediately
