Roasted Brussels Sprouts with Lemon & Parmesan

Crisp, golden sprouts with a zesty twist – the perfect way to enjoy this classic winter crop

Ingredients:

450g Brussels sprouts

Olive oil

Sea salt & black pepper

1 tbsp lemon juice

2 tsp lemon zest

1 tbsp grated Parmesan

1 tbsp thyme leaves

Parsley & chilli flakes to serve

Method

Heat the oven to 220°C (200°C fan). 

 

Toss sprouts with oil, salt and pepper, then roast for 20–30 minutes until golden and tender.


Finish with lemon juice, zest, Parmesan and thyme. 

 

Scatter with parsley and a pinch of chilli flakes to serve.
