Roasted Red Cabbage with Bacon & Caraway

A rich, caramelised side that brings out the sweetness of home-grown cabbage, balanced with smoky bacon and a touch of spice.

Ingredients:

1/2 a red cabbage (about 700g), cut into wedges

1 slice of middle bacon, finely chopped

1 1/2 tbsp olive oil

30g butter, diced

1 tsp caraway seeds

Pinch of chilli flakes

Salt & pepper to taste

Method

Heat the oven to 180°C. 

 

Arrange cabbage wedges on a lined tray, drizzle with oil, dot with butter and scatter over bacon, caraway, chilli, salt and pepper.

 

Roast for 25 minutes until tender and crisp at the edges
