Roasted Broccoli with Spinach & Lemon

Simple, fresh and full of flavour – roasted broccoli and spinach finished with lemon, Parmesan and parsley

Ingredients:

1 head of broccoli, cut into florets

2 tbsp olive oil

1 tbsp Italian seasoning

1 pinch  of crushed red pepper

Juice and zest from 1/2 a lemon

3 oz of baby spinach

3 tbsp grated Parmesan

2 tbsp chopped parsley

salt & pepper to taste

Method

Heat the oven to 220°C (200°C fan). 

 

Toss broccoli with oil, seasoning and chilli, then roast for 20 minutes until golden. 

 

Add spinach and lemon juice, return to the oven for 5 minutes until wilted. 

 

 Serve topped with lemon zest, Parmesan and parsley
