Classic Caesar Salad

Crisp lettuce, golden croutons and a rich, creamy dressing – a timeless salad that tastes even better with home-grown greens

Ingredients:

2 heads romaine lettuce, chopped

4 cups crusty bread, cubed

1/4 cup olive oil

Salt & pepper

1 cup mayonnaise

2 tbsp lemon juice

2 tsp Dijon mustard

1 garlic clove, grated

1 tsp Worcestershire sauce

1 cup Parmesan (half and half of grated & shaved)

Method

Toss bread with oil and salt, then bake at 180°C for 10–15 minutes until crisp.

 

Whisk mayonnaise, olive oil, lemon juice, mustard, garlic, Worcestershire, salt and pepper, then stir in half the Parmesan.

 

Combine lettuce, dressing, croutons and remaining cheese. 

 

Toss well and serve immediately
