Miso-Glazed Aubergines

Aubergines are one of the most rewarding crops to grow — and this simple miso glaze brings out their rich, silky texture. Perfect fresh from the garden or greenhouse.

Ingredients:

3 medium aubergines, halved lengthways 

2 tbsp white miso paste

1 tbsp sesame oil

1 tbsp finely grated ginger

1 tbsp honey or maple syrup

2 tbsp rice vinegar

4 spring onions, sliced

2 tsp black and white sesame seeds

1 tbsp pickled ginger

Method

Heat the oven to 180°C (160°C fan). Whisk the miso, oil, ginger, honey and vinegar to make a glaze.  

 

Score the aubergine flesh in a criss-cross pattern and place cut-side up on a baking tray. 

 

Brush with glaze and bake for 15 minutes. Re-glaze, bake for another 15 minutes, then increase the oven to 200°C (180°C fan) for a final 10–15 minutes until golden and tender.  

 

Top with spring onions, sesame seeds and pickled ginger, and serve with rice or noodles.
