A quick, summery dish that makes the most of homegrown courgettes — fresh, spicy and perfect for sharing.
Ingredients:
1 courgette
2 tbsp olive oil
1 tbsp rose harissa
1 tbsp sherry vinegar
2 tsp honey
2 flatbreads
4 tbsp ricotta
50g feta, crumbled
1 tbsp pine nuts
salt & pepper
Method
Whisk oil, harissa, vinegar and honey.
Peel courgette into ribbons, toss in the dressing and season.
Spread ricotta over warmed flatbreads, top with courgette, feta and pine nuts.
Grill for 5–8 minutes until golden, then drizzle with any leftover dressing
