Florence Fennel Chiarino is a fast-growing variety producing large, tight white bulbs with the distinctive sweet, mild aniseed flavour that makes finocchio such a favourite in Italian cooking. Slice the crisp bulbs finely into fresh salads, roast them to bring out their natural sweetness or try them braised in milk or cream. The delicate feathery foliage can also be used as a fresh aromatic garnish, making this a wonderfully versatile ingredient to grow in the kitchen garden.

Sow outdoors May-July, thinly around 1.5cm deep directly where plants are to grow, with rows approximately 45cm apart. Keep the soil moist while seedlings establish and thin to around 20cm apart. Water regularly during dry weather to encourage tender, well-developed bulbs. Harvest July-October when the swollen bases are approximately 10cm across.
