A fragrant, colourful dish that makes the most of fresh home-grown spinach paired with warming spices.
Ingredients:
600g potatoes, chopped
3 tbsp oil or ghee
2 tsp cumin seeds
1 tsp mustard seeds
1 red onion, diced
2 garlic cloves, minced
1 red chilli, chopped
1 tsp tumeric
1 tsp garam masala
pinch of ground fenugreek
1 tbsp tomato puree
1/2 tsp salt
120ml stock
150g baby spinach
fresh coriander to serve
Method
Boil potatoes for 8 to 10 minutes until tender, then drain.
Heat oil in a large pan, fry cumin and mustard seeds until they pop.
Add onion, cook until soft, then stir in garlic, chilli and spices.
Add tomato purée, potatoes and salt.
Pour in stock and stir through spinach until just wilted.
Top with coriander to serve.
