Honey-Roasted Carrots with Garlic & Lemon

Sweet, buttery carrots roasted until golden and glazed with honey, garlic and a squeeze of lemon.

Ingredients:

900g carrots, peeled & cut into batons

3 garlic cloves, minced

3 tbsp butter

1 1/2 tbsp honey

1/2 lemon, juice only

Salt & pepper

Parsley to serve

Method

Heat the oven to 220°C (200°C fan). 

 

Melt butter in a small pan, add garlic and cook for 30 seconds, then stir in honey.  

 

Toss carrots with half the glaze, season and roast for 30–35 minutes, turning once.  

 

Drizzle over the remaining glaze, squeeze over lemon juice and scatter with parsley to serve.
