Prosciutto and Rocket Pizza

Crisp homemade pizza topped with fresh rocket, creamy mozzarella and prosciutto, simple, vibrant and full of flavour.

Ingredients:

375g Italian '00' flour

7g yeast

1/2 tsp sugar

Olive oil

1 onion chopped

1 garlic clove, crushed

400g chopped tomatoes

2 balls mozzarella, sliced

6 slices prosciutto, torn

50g rocket

salt & pepper

Method

Mix yeast, sugar and 250ml warm water, then stir in half the flour. 

 

Leave for 10 minutes until bubbles form.

 

Fry onion and garlic in 4 tbsp oil, add tomatoes and simmer for 20 minutes until thick.

 

Add remaining flour, 1 tbsp oil and 1 tsp salt to the dough, knead and leave to rise for 30 minutes.

 

Roll into two thin bases, spread with tomato sauce and top with mozzarella.

 

Bake at a high heat for 8 to 10 minutes until golden, then finish with prosciutto and fresh rocket
