Coriander is fantastic in many dishes, but the plants have a frustrating habit of bolting (running to seed prematurely). Cilantro was bred with this drawback in mind - and the result is masses of large, fragrant leaves which stay in good condition much longer than the species. We love this in Indian curries and Thai dishes.
