Spiced Crown Prince Pumpkin Soup

Rich, silky and full of warmth – this comforting soup makes the most of home-grown Crown Prince pumpkins

Ingredients:

1 pumpkin (about 1.5-2kg)

1 tbsp garam masala

2 tsp ground coriander

2 tbsp ground cumin

1/2 tsp chilli flakes

3 tbsp olive oil

1 onion, chopped

1 garlic clove, crushed

1 tsp grated ginger

1 litre of vegetable stock

3 tbsp double cream

salt & pepper

Method

Heat the oven to 180°C (160°C fan). 

 

Toss pumpkin chunks with spices and 2 tbsp oil, season and roast for 40–45 minutes until tender.


Fry onion in the remaining oil until soft, then add garlic, ginger and remaining spices. 

 

Pour in stock and bring to a simmer.


Scoop the pumpkin fl esh from the skins and add to the pan. 

 

Blend until smooth, stir in cream and season to taste.

 

Serve with a drizzle of cream and toasted pumpkin seeds.
