Purple Sprouting Broccoli with Whipped Feta & Lemon

Fresh, zesty and full of colour – tender broccoli and peas tossed in a chilli-lemon dressing, served over creamy whipped feta.

Ingredients:

200g of feta

100g Greek-style yoghurt

1 unwaxed lemon (zest & juice)

1 red chilli, finely chopped

1 2/2 tsp caster sugar

4 tbsp olive oil

230g purple sprouting broccoli

1 garlic clove, sliced

60g frozen peas

Flatbreads, to serve

Method

Blend feta, yogurt and lemon zest until smooth; spread onto a platter. 

 

Whisk lemon juice, chilli, sugar and 3 tbsp olive oil into a dressing.
 

Fry broccoli stalks for 1–2 minutes, then add florets,garlic, peas and a splash of water. 

 

Cook until tender, then toss in the dressing. 

 

Pile onto the whipped feta and serve with flatbreads
