Honey-Roasted Parsnips

Golden, crisp and lightly sweet – the perfect way to enjoy home-grown parsnips.

Ingredients:

500g parsnips

1 tbsp honey

2 tbsp sunflower oil

2 tbsp butter

salt & pepper

Method

Heat the oven to 190°C (170°C fan). 

 

Boil parsnips for 5 minutes, then drain and steam-dry.

 

Toss with flour, honey, salt and pepper.

 

Roast with oil and butter for 40 minutes, turning halfway, until golden and caramelised
