Fennel is a wonderfully aromatic herb with feathery leaves and a warm aniseed flavour that brings freshness to all kinds of home cooking. Snip the leaves into salads and sauces, use the stems and foliage with fish, or allow the flowers to mature and collect the fragrant seeds for seasoning. Its tall, airy habit also makes an attractive addition to the kitchen garden.
