Malabar Spinach produces glossy, soft and succulent leaves with a mild flavour, perfect for steaming, stir-frying and adding to soups or curries. SOW INDOORS April-May, in individual pots of compost, approximately 1cm/half-in deep. Keep at 20-25°C/68-77°F. Germination can be slow, so soak the seeds in warm water before sowing to help soften the seed coat. Harden off and plant outside after the risk of frost has passed in a warm, sunny position. Space plants approximately 20-30cm/8-12in apart and provide a sturdy trellis or other climbing support. Keep well watered and harvest the young leaves and shoots regularly to encourage fresh growth.
