Grow a fascinating winter squash whose cooked flesh separates naturally into tender, spaghetti-like strands. Each vigorous plant can produce 5-7 oval fruits, providing a delicious alternative to pasta when baked or boiled whole. Simply cut the cooked fruit open and loosen the flesh with a fork. SOW INDOORS March-May, singly on their edge in pots of compost, 1.5cm/half-in deep. Keep at 15-20°C/60-68°F, harden off from late May and plant out in June. SOW OUTDOORS during May, sowing two seeds on their edge per position. Thin to the strongest seedling and space plants 90cm/3ft apart. Grow in rich soil, allow plenty of room for the trailing stems and keep well watered, particularly while the fruits are swelling.
