Salsify Mammoth Sandwich Island produces long, slender roots with a wonderfully delicate and distinctive flavour. Sometimes known as the oyster plant, this traditional vegetable is a rewarding ingredient for the winter kitchen, delicious roasted, mashed or added to soups and gratins. The hardy roots can be left in the ground through winter and lifted fresh whenever they are needed.

Position: Full Sun
Sow outdoors April-May, thinly and directly into the final growing position, around 1.5cm deep in rows 30cm apart. Germination can be slow, so keep the bed weed free and maintain moisture while seedlings establish. Thin seedlings as necessary to allow the roots room to develop. Leave mature roots in the ground until required, or lift and store in boxes of dry sand. Harvest October-March.
