Parsnip White Gem is a dependable traditional variety producing broad-shouldered roots with smooth, creamy-white flesh and an excellent sweet, nutty flavour. The relatively short roots are easier to lift than many longer varieties and show useful resistance to canker. Leave them in the ground until required, then roast, mash or add to soups and stews for comforting home-grown winter flavour.

Sow outdoors February-May directly into well-prepared soil, around 1.5cm deep in rows approximately 45cm apart. Germination can be slow, so keep the seed bed moist and weed free. Thin seedlings to an eventual spacing of around 23cm apart. Leave mature roots in the ground until required for the best winter flavour. Harvest October-March.
