You should sow Parsnip Countess F1 seeds outdoors between March and late May, with two to three seeds per station. Though, you should delay sowing if the soil is very cold or waterlogged. These should be sown 1.5cm/half-inch deep, in rows 30cm/12in apart. You should then gradually thin these out until the plants are 30cm/12in apart, or 15cm/6in apart for ‘minis’.

Bear in mind that germination may be slow, so patience is key. You should also regularly hoe the soil and keep it moist. The roots may be left in the soil until required, as frost will enhance the flavour.

You can then harvest these parsnips from August onwards for minis, or between September to March for mature-sized parsnips (though they may need longer in milder conditions). Once harvested, these parsnips are suitable for freezing to extend their shelf life.
