Sow outdoors March-late May, 2-3 seeds per station, 1.5cm/half-inch deep. Rows 30cm/12in apart. For mini parsnips sow seeds at 15cm/6in apart. Thin out gradually until plants are 30cm/12in apart or 15cm/6in apart for ‘minis’. The roots may be left in the soil until required as frost will enhance the flavour. Delay sowing if soil is very cold or waterlogged. Germination may be slow. Hoe regularly and keep soil moist. Harvest August onwards for minis, September-March (longer in milder conditions), for mature size. Suitable for freezing
