Sow celeriac seeds indoors from March to April in the UK. Use seed trays or modules filled with compost and keep them warm at 15-20°C until they germinate in 2-3 weeks. Once seedlings are sturdy, transplant them outdoors in late May or early June, after any frost risk has passed. Space plants 25-30cm apart in rows, in fertile soil that holds moisture well. By doing this, you should have bulbs ready for autumn harvest.
Celeriac is a nutritious vegetable rich in vitamins C and K, potassium, and high in fibre. It supports heart and bone health, aids digestion, and helps boost the immune system. Low in calories and carbs, it is also good for blood sugar control and weight management, making it a healthy alternative to other root vegetables such as potatoes.
Yes, celeriac can be left in the ground over winter in the UK, especially in milder regions, as it tolerates light frosts and improves in flavour after exposure. Cover plants with straw, fleece, or mulch to protect from hard frosts and waterlogging, harvesting as needed until spring.
