Think Chinese version of purple sprouting, and you have a large plant, quick to grow, which will produce a multitude of thin flower stalks. Cut these in bud stage and the taste is fantastic - very sweet! Eat raw or lightly
steamed. Young leaves can also be eaten like spinach. Harvest regularly, if allowed to flower it will stop producing more shoots.
